Recipe : Peaches in Honey and Almond Cream
Makes 4 servings
4 medium peaches, blanched, peeled, pitted and sliced
2 tablespoons honey
8 fluid ounces vanilla nonfat sugar-free frozen yogurt, softened
1/4 teaspoon almond extract
1 ounce slivered almonds
In a 1-quart shallow microwave-safe dish, combine peaches and honey. Cover
with vented plastic wrap; microwave on High (100% power) 1 minute. Remove
cover carefully; toss mixture to coat evenly. Divide peach mixture evenly among
4 dessert dishes.
In small bowl, with wire whisk, combine yogurt and extract. Top each portion of
peach mixture with one-fourth of the yogurt mixture; sprinkle evenly with
almonds.
