Recipe : Peaches with Ginger Cream
Makes 4 servings
1/2 cup part-skim ricotta cheese
2 tablespoons skim milk
1 tablespoon confectioners sugar
1/2 teaspoon ground ginger
8 canned peach halves with 1/2 cup juice (no sugar added)
In mini food processor or blender, combine ricotta cheese, milk, sugar and
ginger; puree until smooth.
Just before serving, divide peach halves and juice evenly among 4 small bowls;
top each portion with one-fourth of the ricotta cheese mixture.
EACH SERVING (2 PEACH HALVES, 2 TABLESPOONS JUICE AND 2
