Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Pine Nut-Filled Figs with Chocolate Icing

Makes 4 servings

4 large dried figs
4 teaspoons pine nuts
1 ounce semisweet chocolate, chopped

Preheat the oven to 350o F.
Trim the stems from the figs; cut each almost in half crosswise (do not separate
halves). Gently open figs and press 1 teaspoon pine nuts into each fig; press to
close. Carefully place figs in an 8" square baking pan; bake 15 minutes, until the
figs are slightly darkened and the nuts are toasted.
In a small saucepan over low heat, melt the chocolate, stirring frequently. Spread
the top of each fig with an equal amount of chocolate. Let stand at room
temperature 2 hours, until the chocolate is set, or refrigerate 20 minutes to set
quickly.
