Delicious And Healthy Low Carb Atkins Diet Recipe

Makes 4 servings
1 lemon
1/4 cup granulated sugar
One 2" vanilla bean, split
1 large pear, pared, cored and cut into wedges
1 small Granny Smith apple, pared, cored and cut into wedges
2 tablespoons dried cranberries or raisins
With zester or vegetable peeler, remove the zest from the lemon, forming long
strips; place in medium saucepan. Cut lemon in half; squeeze juice into same
saucepan.
Add 1 cup water, the sugar and vanilla bean to zest-juice mixture; bring to a boil.
Reduce heat to low; simmer 5 minutes.
Add pear, apple and cranberries to lemon mixture; simmer 10 minutes longer, until
fruit is tender. Remove and discard vanilla bean.
With slotted spoon, transfer fruit to medium bowl. Simmer liquid, stirring
occasionally, 5 minutes, until syrupy; pour over fruit mixture.
