Recipe : Prunes in Vermouth

Makes 4 servings

24 medium pitted prunes
2 fluid ounces (1/4 cup) sweet red vermouth
2 x 1/2" strip orange zest
1 teaspoon granulated sugar

In small saucepan, combine prunes, 1/2 cup water, the vermouth, orange zest and
sugar; bring liquid to a boil. Reduce heat to low; simmer, covered, 10 minutes,
until prunes are tender.
Cool prune mixture slightly, then refrigerate, covered, until chilled. Remove
orange zest before serving.
