Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Raisin Bran-Dried Apple Clusters

These crispy, chewy clusters are perfect any time of day.

Makes 4 servings

1/2 egg white
1 tablespoon + 1 teaspoon evaporated skimmed milk
1 teaspoon confectioners sugar
1/2 teaspoon vanilla extract
1/4 teaspoon cinnamon
3 ounces raisin bran cereal
1 1/2 ounces dried apple slices, chopped

Preheat oven to 300o F. Spray baking sheet with nonstick cooking spray.
In medium bowl, combine egg white, milk, sugar, vanilla and cinnamon; add cereal
and dried apples. Stir until well coated, breaking up any large cereal flakes.
Divide mixture into eight 1/4-cup clusters; press each into a circle on prepared
baking sheet. Bake until firm, 15 minutes. Remove to a rack to cool.

SERVING (2 CLUSTERS) PROVIDES: 1/2 Fruit, 1 Bread, 10 Optional Calories; 1
gram Fat, 4 grams Fiber.
