Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Spiced Pears
These brilliant red pears are a delicious way to get more fresh fruit in your diet.
Makes 4 servings
4 small Bosc or Anjou pears, pared
1 tablespoon fresh lemon juice
1 cup low-calorie cranberry juice cocktail
1/4 cup granulated sugar
6 whole cloves
One 3" cinnamon stick
Preheat the oven to 450o F.
Place the pears in a baking dish to fit snugly; sprinkle with the lemon juice.
In a small bowl, combine the cranberry juice, sugar and cloves. Pour evenly over
the pears; add the cinnamon stick to the dish.
Bake, basting the pears every 5-10 minutes, 45 minutes, until the pears are tender
when pierced with a fork. Cool on a wire rack in the pan 30 minutes, continuing
to baste every 5-10 minutes.
Remove and discard the cloves and cinnamon stick. If necessary, trim a small
slice from the bottom of the pears so they stand upright. Place 1 pear on each of
4 plates; spoon 2 tablespoons of the liquid over each pear and serve.
SERVING (1 PEAR WITH 2 TABLESPOONS LIQUID ) PROVIDES: 1 1/4 Fruits,
45 Optional Calories.
