Makes 4 servings

8 amaretti cookies (1" diameter)
8 fluid ounces vanilla nonfat sugar-free frozen yogurt, softened

Line four 2 3/4" muffin cups with decorative paper or foil baking cups.
Place 4 cookies in gallon-size sealable plastic bag; seal, squeezing out air. With
meat mallet or heavy skillet, crush cookies; set aside.
Divide frozen yogurt evenly among prepared cups; with fork or back of spoon,
spread yogurt evenly. Sprinkle each portion with an equal amount of cookie
crumbs; freeze until firm.
Just before serving, press 1 remaining cookie onto each tortoni.
