Recipe : Broiled Tuna with Fennel-Crumb Crust
The fresh taste of fennel will perk up this or any fish.
Makes 4 servings
3 tablespoons plain dried bread crumbs
2 tablespoons minced fennel bulb
1 tablespoon fresh lemon juice
1 tablespoon minced fresh parsley
2 teaspoons olive oil
1 teaspoon fennel seeds, crushed
1/4 teaspoon salt
1/4 teaspoon ground white pepper
Four 4-ounce tuna steaks
Spray the broiler rack with nonstick cooking spray; place 5" from heat. Preheat
the broiler.
In a small bowl, combine the bread crumbs, minced fennel, juice, parsley, oil,
fennel seeds, salt and pepper.
Broil the fish 5 minutes; turn and broil 3 minutes more. Spread the bread crumb
mixture evenly over the tuna; broil 3 minutes, until the fish flakes easily when
tested with a fork and the crust is a deep gold. Place one tuna steak on each of 4
plates and serve at once.
SERVING (3 OUNCES TUNA WITH CRUST) PROVIDES: 1/2 Fat, 1 1/2 Proteins,
1/4 Bread.
