Recipe : Calamari on Skewers
Calamari (squid) can also be grilled in a wire grill basket; just be sure to spray the
squid well with nonstick cooking spray. Be careful not to overcook squid; they will
become impossibly rubbery.
Makes 4 servings
4 fluid ounces (1/2 cup) medium dry sherry
1 teaspoon light sesame oil
1 teaspoon hot red pepper sauce, or to taste
1/4 cup reduced-sodium soy sauce
1/4 cup fresh lemon juice
1 pounds 4 ounces cleaned small squid
1 tablespoon peanut oil
4 medium garlic cloves, crushed
Lemon wedges, to garnish
In medium bowl, combine sherry, soy sauce, juice, peanut oil, garlic, sesame oil
and pepper sauce, whisking to blend. Set aside 1/2 cup of marinade for dipping
sauce. Add squid to remaining marinade; toss to coat. Cover and let stand 30
minutes at room temperature.
Meanwhile, prepare grill for a medium fire, using direct method (see Cooking
Methods) . If using wooden skewers, soak in water 30 minutes.
Thread squid onto twelve 12" metal or wooden skewers. Grill directly over hot
coals, just until squid becomes opaque, about 2-3 minutes each side. Place 3
kabobs on each of 4 plates and serve immediately with lemon wedges and
reserved dipping sauce.
