Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Capellini with Seafood

Shrimp, scallops, mussels and clams in a light briny broth nestle among delicate strands
of pasta flecked with herbs. Treat yourself well and use the freshest seafood you can
find.

Makes 4 servings

12 medium clams, scrubbed
12 medium mussels, scrubbed and debearded
2 fluid ounces ( 1/4 cup) dry white wine
2 garlic cloves, minced
2 teaspoons olive oil
8 ounces bay scallops, rinsed and drained
5 ounces medium shrimp (about 12), peeled and deveined
2 tablespoons minced fresh parsley
1 tablespoon minced fresh thyme leaves
1 tablespoon minced fresh oregano
6 ounces capellini (angel hair) pasta
Freshly ground black pepper, to taste

In a large saucepan over medium heat, combine the clams, mussels, wine and
garlic. Cover and cook 4-5 minutes, until the clams and mussels open. Discard any
unopened clams and mussels. Set aside with the cooking liquid.
Place a large nonstick skillet over medium heat 30 seconds; heat the oil 30
seconds more. Add the scallops, shrimp, parsley, thyme and oregano. Cook,
stirring constantly, 2-3 minutes, until the shrimp are pink and the scallops are
opaque. Remove from the heat and add the clam mixture to the scallop mixture;
set aside and keep warm.
Meanwhile, in a large pot of boiling water, cook the capellini according to
package directions. Drain and place in a serving bowl. Add the seafood mixture
and sprinkle with pepper; toss to combine. Divide evenly among 4 plates and serve
at once.
