Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Clam and Potato Frittata

Makes 4 servings

1 cup cut asparagus (2" pieces)
1 tablespoon + 1 teaspoon olive oil
1 medium tomato, seeded and minced
1/2 cup thinly sliced red onion
3 garlic cloves, minced
1 teaspoon minced fresh oregano leaves
8 ounces cooked red potatoes, cut into 1/2" pieces
4 ounces drained canned whole baby clams
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 eggs
4 egg whites
1 1/2 ounces Asiago cheese, grated

In large pot of boiling water, cook asparagus 3 minutes, until just tender. Drain,
discarding liquid; rinse with cold water. Drain again; set aside.
Preheat broiler.
In large nonstick skillet with flameproof or removable handle, heat 2 teaspoons
of the oil; add half of the tomato, the onion, garlic and oregano. Cook over
medium-high heat, stirring frequently, 5 minutes, until onion is softened. Add
potatoes; cook, stirring occasionally, 4 minutes, until potatoes are lightly
browned. Add drained asparagus; cook, stirring frequently, until heated through.
Transfer vegetable mixture to large bowl; wipe skillet clean. Add clams, salt and
pepper to vegetable mixture; stir to combine.
In medium bowl, with wire whisk, combine eggs, egg whites and 1 ounce of the
cheese. Add egg mixture to vegetable mixture; stir to combine.
In same skillet, heat remaining 2 teaspoons oil; add egg mixture, spreading to
cover bottom of skillet. Cook over medium-low heat 5 minutes, until bottom is
browned and edges are set.
Transfer skillet to broiler; broil 1-2 minutes, until top is lightly browned and
mixture is set.
Cut frittata into 4 equal wedges; place 1 wedge on each of 4 plates. Top each
wedge with an equal amount of remaining tomato and cheese.

SERVING (1 WEDGE, 2 TABLESPOONS TOMATO, 3/4 TEASPOON CHEESE)
