Recipe : Cod Steaks with Tandoori Spices

The exotic spices in this colorful dish provide a tangy twist to an otherwise mild fish.
Marinate the cod overnight for the fullest flavor.

Makes 4 servings

1/4 cup yogurt cheese*
1/4 teaspoon ground cumin
1/4 cup fresh lime juice
1/4 teaspoon ground red pepper
1 garlic clove
1/4 teaspoon red food coloring (optional)
One 1" piece pared fresh ginger root
1/8 teaspoon ground cloves
1 tablespoon curry powder
Four 5-ounce cod steaks
4 lime slices, for garnish
1/4 teaspoon cinnamon

In blender or food processor, combine yogurt cheese, juice, garlic, ginger, curry
powder, cinnamon, cumin, red pepper, food coloring (if using) and cloves; puree
until smooth. Marinate cod steaks at least 1 hour or overnight (see Marinating
Know-how).
Prepare grill for a medium fire, using direct method (see Cooking Methods) ;
spray grill basket with nonstick cooking spray.
Remove fish from marinade; place in prepared grill basket and baste with some of
the remaining marinade. Grill, basting with remaining marinade, 3 minutes per
side, until fish flakes easily when tested with a fork.
Carefully remove fish from grill basket; remove and discard skin and bones.
Transfer steaks to each of 4 plates; garnish with lime slices and serve.

SERVING (4 OUNCES COD) PROVIDES: 2 PROTEINS, 15 Optional Calories.

mg Sodium, 4 g Total Carbohydrate, 1 g Dietary Fiber, 27 g Protein, 71 mg Calcium

*To prepare yogurt cheese, spoon 1/2 cup plain nonfat yogurt into coffee filter or
cheesecloth-lined strainer; place over bowl. Refrigerate, covered, at least 5 hours or
overnight. Discard liquid in bowl. Makes 1/4 cup yogurt cheese.
