Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Crab in Phyllo Triangles
Makes 6 servings
2 tablespoons reduced-calorie stick margarine
2 teaspoons olive oil
1/2 cup minced scallions
One 10-ounce package frozen chopped spinach, cooked, drained and squeezed dry
6 ounces cooked crabmeat
1/2 cup nonfat cottage cheese
2 eggs, lightly beaten
2 1/4 ounces feta cheese, crumbled
1/4 cup minced fresh flat-leaf parsley
1/4 cup minced fresh dill
1 tablespoon plain dried bread crumbs
1/4 teaspoon salt
Pinch freshly ground black pepper
6 ounces fresh or thawed frozen phyllo dough (about 9 sheets)*
Preheat oven to 375o F. Spray nonstick baking sheet with nonstick cooking spray.
In small saucepan, combine margarine and oil. Place over low heat; cook until
margarine is melted and mixture is heated. Set aside; keep warm.
Transfer 1 tablespoon warm margarine mixture to medium nonstick skillet; heat.
Add scallions; cook over medium-high heat, stirring frequently, 1 minute, until
just softened.
Transfer scallion mixture to large bowl. With fork, stir in spinach, crabmeat,
cottage cheese, eggs, feta cheese, parsley, dill, bread crumbs, salt and pepper.
Stack 3 phyllo sheets on work surface; brush evenly with one-sixth of the
remaining margarine mixture. Cut stack in half lengthwise, making 2 strips.
Spoon one-sixth of the spinach mixture onto one corner of each phyllo strip; fold
flag-style, making 2 filled triangles. Repeat, making 4 more triangles.
Place triangles, seam-side down, onto prepared baking sheet; brush evenly with
any remaining margarine mixture. Bake 35 minutes, until golden brown and
heated through. Serve warm or at room temperature.
SERVING (1 TRIANGLE) PROVIDES: 1 Fat, 3/4 Vegetable, 1 1/2 Proteins, 1 Bread,
