Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Curried Shrimp and Clams
Makes 4 servings
1/2 ounces orzo (rice-shaped pasta)
1 tablespoon + 1 teaspoon olive oil
1 cup coarsely chopped onions
1 small apple, pared, cored and diced
1/2 cup diced green bell pepper
2 garlic cloves, minced
1 tablespoon all-purpose flour
2 teaspoons mild or hot curry powder
1/2 teaspoon ground ginger
Pinch crushed red pepper flakes, or to taste
1 cup low-sodium chicken broth
1 tablespoon fresh lemon juice
2 tablespoons golden raisins
12 medium clams
12 large shrimp (about 6 1/2 ounces), peeled and deveined (tails left on)
In large pot of boiling water, cook orzo 9 minutes, until tender. Drain, discarding
liquid; place into serving bowl. Keep warm.
Meanwhile, in large nonstick skillet, heat oil; add onions, apple, bell pepper and
garlic. Cook over medium-high heat, stirring frequently, 6-7 minutes, until
mixture is lightly browned. Stir in flour, curry powder, ginger and red pepper
flakes; cook, stirring constantly, 1 minute. Gradually stir in broth, juice and 1/2
cup water; bring liquid to a boil. Reduce heat to low; stir in raisins. Simmer,
covered, stirring occasionally, 10 minutes, until slightly thickened.
Top curry mixture with clams; cook, covered, 3 minutes. Add shrimp; cook,
covered, 2-4 minutes, until clams open and shrimp turn pink (discard any clams
that do not open). Serve over warm orzo.
SERVING (3/4 CUP ORZO, 1/3 CUP CURRY MIXTURE, 3 CLAMS, 3 SHRIMP)
