Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Curried Tuna and Grape Salad Sandwich
Makes 4 servings
8 ounces drained canned water-packed white tuna, flaked
1/2 cup coarsely chopped celery
1/2 cup diced yellow or red bell pepper
1/4 cup minced scallions
1/4 cup plain nonfat yogurt
2 tablespoons reduced-calorie mayonnaise
1 teaspoon mild or hot curry powder
20 small or 12 large seedless red grapes, halved
Four 2-ounce hard crusty rolls
1/2 cup packed well-washed spinach leaves
In medium bowl, combine tuna, celery, bell pepper, scallions, yogurt, mayonnaise
and curry powder; stir in grapes.
With serrated knife, cut a thin slice off top of each roll; set roll tops aside.
Remove and discard 1 ounce soft bread from center of each roll. Line inside of
rolls with spinach, allowing ends of leaves to extend outside of rolls; top each
portion of spinach with one-fourth of the tuna mixture, then one reserved roll
top.
SERVING (1 SANDWICH) PROVIDES: 3/4 Fat, 1/4 Fruit, 1 Vegetable, 1 Protein, 1
Bread, 10 Optional Calories.
