Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Fish Stew Avgolemono
Red snapper fillets may be used in place of the halibut in this hearty stew.
Makes 4 servings
3 tablespoons all-purpose flour
1/4 teaspoon freshly ground black pepper
15 ounces boneless halibut steaks, cut into 1 1/2" pieces
1 tablespoon + 1 teaspoon olive oil
1 cup slivered onions
4 garlic cloves, minced
10 ounces all-purpose potatoes, pared and cut into 1" pieces
2 cups sliced carrots (1/2" slices)
1 cup bottled clam juice
1/4 cup egg substitute
1/4 cup fresh lemon juice
Minced fresh dill, to garnish
On sheet of wax paper or paper plate, combine flour and pepper; add fish,
turning to coat evenly. Set aside.
In large saucepan, heat 1 tablespoon of the oil; add fish. Cook over medium-high
heat, turning as needed, 2-3 minutes, until fish is browned on all sides. Remove
fish from saucepan; set aside.
In same saucepan, heat remaining 1 teaspoon oil; add onions and garlic. Cook over
medium-high heat, stirring frequently, 5 minutes, until onions are softened. Add
potatoes, carrots, juice and 2 cups water; bring liquid to a boil. Reduce heat to
low; simmer, covered, 15 minutes, until potatoes are just tender.
Add browned fish to potato mixture; simmer, covered, 5 minutes, until fish flakes
easily when tested with fork. With slotted spoon, remove solids from saucepan;
set aside.
In medium bowl, with wire whisk, combine egg substitute and lemon juice;
continuing to stir with whisk, slowly add 1/4 cup clam juice mixture. Stirring
constantly with wire whisk, slowly pour egg mixture into remaining clam juice
mixture; cook over medium-low heat, stirring constantly, 4-5 minutes, until
slightly thickened (do not boil).
Return solids to saucepan; cook, stirring occasionally, just until heated through.
Serve garnished with dill.
