Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Fish with Toasted Garlic and Lime
This exquisitely garlicky dish is the perfect centerpiece for a special dinner. Serve it
with Green Rice with Peas and grilled tomatoes.
Makes 4 servings
1/4 cup fresh lime juice
1/2 teaspoon salt
Four 5-ounce catfish or grouper fillets, each 1/2" thick
1 tablespoon unsalted margarine
2 teaspoons corn oil
8 large garlic cloves, sliced
3 tablespoons all-purpose flour
1/4 teaspoon freshly ground black pepper
1/2 fluid ounce (1 tablespoon) dry white wine
2 tablespoons minced fresh cilantro
Lime slices, to garnish
To prepare marinade, in gallon-size sealable plastic bag, combine 3 tablespoons
of the juice and 1/4 teaspoon of the salt; add fish. Seal bag, squeezing out air;
turn to coat. Refrigerate 1 hour, turning bag occasionally.
Drain and rinse fish, then pat dry with paper towels.
In large nonstick skillet, heat together margarine and oil; add garlic. Cook over
low heat; stirring constantly, 5 minutes, until golden brown (do not burn). Remove
skillet from heat. With slotted spoon, transfer garlic to small bowl; set aside.
On paper plate or sheet of wax paper, combine flour, pepper and remaining 1/4
teaspoon salt; coat one side of each fillet with flour mixture.
In same skillet, cook fish, flour-side down, over medium heat, 3-4 minutes, until
golden brown. Turn fillets over; cook 3 minutes longer, until fish flakes easily
when tested with fork. Transfer fillets to serving platter; keep warm.
Add wine, cilantro, reserved garlic and remaining 1 tablespoon juice to skillet;
cook over medium high heat, stirring constantly, 1-2 minutes, until most of liquid
has evaporated. Spoon wine mixture over fish; garnish with lime slices.
