Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Grilled Sea Scallops with Basil-Tartar Sauce

Scallops make a perfect light and easy meal. These are done in a flash and can be
served cold the next day.

Makes 4 servings

3/4 cup yogurt cheese*
1/8 teaspoon paprika
2 tablespoons + 2 teaspoons reduced-calorie mayonnaise
1/8 teaspoon hot red pepper sauce
1/4 cup minced fresh basil
2 tablespoons fresh lemon juice
2 tablespoons rinsed, drained capers, chopped
2 teaspoons Dijon-style mustard
1/2 teaspoon salt
1 tablespoon finely chopped shallots
1/4 teaspoon freshly ground black pepper
1 pound 4 ounces large sea scallops
4 whole basil leaves, for garnish

Prepare grill for a hot fire, using direct method (see Cooking Methods) ; spray
grill basket with nonstick cooking spray.
In medium bowl, whisk together yogurt cheese, mayonnaise, juice, mustard, 1/4
teaspoon of the salt, 1/8 teaspoon of the black pepper, the paprika and pepper
sauce. Stir in minced basil, capers and shallots. Refrigerate, covered, at least 20
minutes.
Season scallops on both sides with the remaining 1/4 teaspoon salt and 1/8
teaspoon pepper. Grill scallops in prepared grill basket, 1-2 minutes per side, until
opaque.
Divide scallops evenly among 4 plates and spoon 1/4 cup sauce alongside each
portion; garnish each with basil leaf and serve.

SERVING (4 OUNCES SCALLOPS, WITH 1/4 CUP SAUCE) PROVIDES: 1/2
Milk, 1 Fat, 2 Proteins.

*To prepare yogurt cheese, spoon 1 1/2 cups plain nonfat yogurt into coffee filter or
cheesecloth-lined strainer; place over bowl. Refrigerate, covered, at least 5 hours or
overnight. Discard liquid in bowl. Makes 3/4 cup yogurt cheese.
