Recipe : Grilled Sea Scallops with Parsley-Brandy Pesto

Don't be fooled by the small amount of pesto in this recipe. Its flavor is very intense,
so a little bit goes a long way.

Makes 4 servings

3/4 cup minced fresh flat-leaf parsley
1 tablespoon fresh lemon juice
1 tablespoon olive oil
1/2 ounce goat cheese
1 garlic clove, minced
1/2 fluid ounce (1 tablespoon) brandy
1 pound 4 ounces large sea scallops
1/2 ounce walnuts, finely chopped

Prepare grill for a hot fire, using direct method (see Cooking Methods) ; spray
grill basket with nonstick cooking spray.
In food processor, combine parsley, cheese, brandy, walnuts, juice, oil and garlic;
puree until smooth.
In medium bowl, toss scallops with pesto until well-coated.
Grill scallops in prepared grill basket, 1-2 minutes per side, until opaque. Divide
evenly among 4 plates and serve.

SERVING (4 OUNCES SCALLOPS) PROVIDES: 3/4 Fat, 2 Proteins, 30 Optional
