Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Grilled Swordfish in Lime-Cilantro Marinade

This marinade works well with most white fish. Try it with sea bass or mahi mahi.

Makes 4 servings

4 five-ounce swordfish steaks, 1" thick
1 tablespoon extra virgin olive oil
1 tablespoon light tamari or reduced-sodium soy sauce
2 fluid ounces (1/4 cup) dry vermouth
1/8 teaspoon mixed herb-seasoned salt
2 tablespoons fresh lime juice
1 tablespoon minced fresh cilantro

Prepare grill for a medium fire using direct method (see Cooking Methods) .
Combine vermouth, juice, cilantro, oil, tamari or soy sauce and seasoned salt;
marinate swordfish 1 hour (see Marinating Know-how).
Drain marinade into small saucepan. Bring to a rolling boil; boil for 1 minute,
stirring constantly. Remove from heat.
Grill swordfish 8 minutes, turning once, until fish flakes easily when tested with
a fork.
Place fish on serving platter; spoon marinade over fish and serve.

SERVING (4 OUNCES SWORDFISH, WITH ONE-FOURTH MARINADE)
