Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Grilled Tuna with Citrus Salsa
Makes 4 Servings
1 medium pink grapefruit
2 small naval oranges
1/2 cup chopped fresh mint
1 teaspoon honey
1/4 teaspoon hot pepper sauce
1/4 cup fresh lemon juice
1/4 cup orange juice
2 tablespoons fresh lime juice
Four 5-ounce boneless tuna steaks
1 cup fresh watercress
To prepare salsa, over small bowl peel grapefruit and oranges; remove membrane.
Using a serrated knife, cut fruits into bite-size pieces; place in bowl. Stir in 1/4
cup of the mint, the honey and hot pepper sauce. Cover with plastic wrap;
refrigerate 1 hour, or until chilled.
To prepare marinade, in a gallon-size sealable plastic bag, combine the lemon,
orange and lime juices and remaining 1/4 cup mint. Add tuna steaks. Seal bag,
squeezing out air; turn to coat fillets. Refrigerate 30 minutes, turning bag
several times. Remove steaks from marinade; discard marinade.
Spray grill rack with nonstick cooking spray. Place grill rack 5" from coals.
Prepare grill according to manufacturer's directions.
Grill tuna steaks on rack 10-12 minutes, turning once, until fish flakes when
tested with a fork.
Line serving platter with watercress; arrange tuna steaks on top. Serve with
citrus salsa.

Broiled Tuna With Citrus Salsa
Preheat broiler. Spray rack with nonstick cooking spray. Place fish on rack 5"
from source of heat and broil 2 minutes on each side.
