Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Groundnut Stew
Try this unusual combination of flavors when you want something new and exciting.
Since it thickens upon standing, before reheating add water, a few spoonfuls at a
time, until the soup reaches the desired thickness.
Makes 4 servings
1 cup sliced onions
1 cup sliced red bell pepper
2 teaspoons finely chopped deveined seeded jalapeno pepper (wear gloves to
prevent irritation)
2 garlic cloves, minced
2 cups low-sodium chicken broth
8 ounces sweet potatoes, pared and cut into 3/4" pieces
1/2 teaspoon salt
1/4 teaspoon ground red pepper
1/2 cup boiling water
1/4 cup smooth peanut butter
10 ounces orange roughy fillets, cut into 1 1/2 x 1" pieces
1 cup frozen sliced okra
In large saucepan, combine onions, bell pepper, jalapeno pepper, garlic and 2
tablespoons water; cook over low heat, covered, 2 minutes, until vegetables are
softened and liquid is evaporated.
Add broth, sweet potatoes, salt and ground red pepper to vegetable mixture; bring
liquid to a boil. Reduce heat to low; simmer, covered, 15 minutes, until sweet
potato is just tender.
Meanwhile, in small bowl, combine boiling water and peanut butter, stirring until
mixture is smooth.
Stir peanut butter mixture into sweet potato mixture, then stir in fish and okra;
bring liquid to a boil. Reduce heat to low; simmer, covered, 10-12 minutes, until
fish flakes easily when tested with fork.
SERVING (1 1/4 CUPS) PROVIDES: 1 Fat, 1 1/2 Vegetables, 2 Proteins, 1/2 Bread,
10 Optional Calories.
