Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Lobster Nicoise

Makes 4 servings

1 pound 4 ounces small new potatoes
2 cups whole green beans
4 cups thinly sliced Romaine lettuce leaves
12 ounces cooked shelled lobster, cut into chunks
24 cherry tomatoes, halved
1/4 cup balsamic vinegar
2 tablespoons fresh lemon juice
1 tablespoon + 1 teaspoon olive oil
1 tablespoon minced fresh tarragon leaves
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

Place potatoes into large saucepan; add water to cover. Bring liquid to a boil;
reduce heat to low. Simmer 12-15 minutes, until potatoes are tender. With slotted
spoon, remove potatoes from saucepan. Rinse with cold water; drain. Refrigerate,
covered, until chilled.
Meanwhile, in same pot of boiling water, cook green beans 3 minutes, until bright
green and just tender. Drain, discarding liquid. Rinse with cold water; drain
again. Refrigerate, covered, until chilled.
To assemble salad, line serving platter with lettuce leaves. Cut potatoes into
halves; arrange potatoes, green beans, lobster and tomatoes on lettuce.
To prepare dressing, in small jar with tight-fitting lid or small bowl, combine
vinegar, juice, oil, tarragon, salt and pepper; cover and shake well or, with wire
whisk, blend until combined. Pour dressing over salad.

SERVING (ONE-fOURTH OF SALAD, 2 TABLESPOONS DRESSING)
PROVIDES: 1 Fat, 4 Vegetables, 1 1/2 Proteins, 1 Bread.
