Recipe : Mexican Seviche

Try our version of seviche, the Mexican delicacy that uses lemon juice rather than
heat to "cook" the fish--in an edible bowl! Tostada shells are tortillas shaped into a
cup, then baked to hold their shape; two shells should weigh about 3U4 ounce.

Makes 4 servings

8 ounces red snapper fillets, cut into 1 1/4" cubes
8 ounces sea scallops, halved
1/4 cup fresh lemon juice
1/2 teaspoon salt
2 medium tomatoes, seeded and diced
1/4 cup diced red onion
2 tablespoons minced fresh cilantro
1 tablespoon + 1 teaspoon olive oil
2 teaspoons minced deveined seeded jalapeno pepper (wear gloves to prevent
irritation)
1 1/2 teaspoons minced fresh marjoram leaves
4 blue corn tostada shells
2 cups shredded Romaine lettuce leaves

In gallon-size sealable plastic bag, combine snapper, scallops, juice and salt. Seal
bag, squeezing out air; turn to coat fish. Refrigerate 3-4 hours, turning bag
occasionally.
In large bowl, combine tomatoes, onion, cilantro, oil, pepper and marjoram;
refrigerate, covered, stirring occasionally, until chilled.
Drain fish mixture and discard the marinade. Add fish mixture to tomato
mixture; toss to combine.
Line each tostada shell with 1/2 cup lettuce; top each portion of lettuce with one-
fourth of the fish mixture.

SERVING (1 CUP SEVICHE, 1/2 CUP LETTUCE) PROVIDES: 1 Fat, 2 1/4
Vegetables, 2 Proteins, 1/2 Bread, 10 Optional Calories.
