Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Asian Beef on a Stick

Serve these beef kabobs on a bed of grated carrot and shredded lettuce for a
different dinner entree.

Makes 4 servings

1/4 cup chopped scallions
2 tablespoons reduced-sodium soy sauce
1 tablespoon minced pared fresh ginger root
1 tablespoon rice wine vinegar
2 teaspoons sesame oil
1 teaspoon balsamic vinegar
1/2 teaspoon freshly ground black pepper
1 garlic clove, minced
10 ounces lean beef loin, cut into 16 strips
1/4 cup Chinese mustard

Prepare grill for a hot fire, using direct method (see Cooking Methods) . If using
wooden skewers, soak in water 30 minutes.
Combine scallions, soy sauce, ginger, rice wine vinegar, oil, balsamic vinegar,
pepper and garlic; add beef and marinate 15 minutes (see Marinating Know-how) .
Remove beef from marinade with tongs; discard any remaining marinade. On each
of sixteen 6" metal or wooden skewers, thread 1 beef strip by piercing beef in
several places. Grill kabobs 5 minutes, then turn and grill 5 minutes more. Place 4
kabobs on each of 4 plates and serve with Chinese mustard on the side.

SERVING (4 KABOBS, WITH 1 TABLESPOON MUSTARD) PROVIDES: 1/2 Fat, 2
Proteins.
