Recipe : Barbecued Beef and Lentil Burgers

Lentils make a terrific, high-fiber "stretcher" for ground beef--plus they taste
great!

Makes 4 servings

10 ounces lean ground beef (10% or less fat)
4 ounces drained cooked lentils
1/4 cup finely chopped onion
1/4 cup barbecue sauce
1 tablespoon minced fresh parsley
4 slices low-fat process American cheese
Four 2-ounce hamburger rolls, split and grilled
1 medium tomato, sliced

Preheat grill for a medium fire, using direct method (see Cooking Methods).
In large bowl, combine beef, lentils, onion, barbecue sauce and parsley. Shape
mixture into 4 equal patties.
Grill, turning once, 10 minutes or until done to taste. Place 1 slice of cheese on
each patty; grill just until cheese melts. Serve each burger on a roll with sliced
tomato.

SERVING (1 BURGER ON ROLL, WITH CHEESE AND TOMATO) PROVIDES:
1/2 Vegetable, 3 Proteins, 2 Breads, 20 Optional Calories.
