Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Beef Picadillo
Quick to fix, this dish is a welcome change from the usual ground beef concoctions.
Serve it over rice or with tortillas.
Makes 4 servings
2 teaspoons corn oil
3 ounces peeled yellow-ripe plantain, cut into 1/4" slices
1 cup finely chopped onions
10 ounces lean ground beef (10% or less fat)
2 garlic cloves, crushed
1/2 cup tomato puree or sauce
10 large or 6 small pimiento-stuffed green olives, sliced
2 tablespoons raisins, chopped
1/2 teaspoon dried oregano leaves
1/4 teaspoon ground cinnamon
1/4 teaspoon salt
Pinch ground cloves
In medium nonstick skillet, heat oil; add plantain. Cook over medium heat,
turning pieces frequently, 3-5 minutes, until golden brown. Remove plantain
from skillet; set aside.
In same skillet, cook onions over medium heat, stirring frequently, 10-12
minutes, until golden brown. Add beef and garlic; cook, stirring to break up
meat, 4-5 minutes, until no longer pink.
Add tomato puree, olives, raisins, oregano, cinnamon, salt, cloves, 1/3 cup
water and reserved plantain to beef mixture; reduce heat to low. Cook,
covered, stirring occasionally, 15 minutes, until plantain is tender.
EACH SERVING (3/4 CUP) PROVIDES: 3/4 Fat, 1/4 Fruit, 1 Vegetable, 2
Proteins, 1/4 Bread
PER SERVING: 220 Calories, 10 g Total Fat, 3 g Saturated Fat, 44 mg Cholesterol,
