Recipe : Beef Tacos with Tomato Salsa
Tacos are fun to eat and a snap to make! If you are short on time, use store-bought
salsa.
Makes 4 servings
1 cup diced tomato
1/2 cup minced fresh cilantro
1/4 cup diced red onion
2 tablespoons fresh lime juice
1 tablespoon minced deveined seeded jalapeno pepper (wear gloves to prevent
irritation)
1 cup chopped yellow onions
8 ounces lean ground beef (10% or less fat)
1/4 cup tomato sauce (no salt added)
1 tablespoon mild or hot chili powder
1 teaspoon ground cumin
1 garlic clove, minced
8 taco shells
1 1/2 ounces reduced-fat cheddar cheese
1 cup shredded iceberg lettuce
To prepare salsa, in large bowl, combine tomato, cilantro, red onion, juice and
jalapeno pepper; set aside.
Spray large nonstick skillet with nonstick cooking spray; heat. Add chopped
onions; cook over medium-high heat, stirring frequently, 5 minutes, until
softened. Remove onions from skillet; set aside.
In same skillet, cook beef, stirring to break up meat, 4-5 minutes, until no
longer pink. Add tomato sauce, chili powder, cumin, garlic and cooked onions;
cook, stirring frequently, 3 minutes, until thickened.
Spoon an equal amount of beef mixture into each taco shell; sprinkle evenly
with cheese. Top each portion of cheese with 2 tablespoons lettuce and divide
salsa evenly among tacos.
SERVING (2 TACOS) PROVIDES: 2 Vegetables, 2 Proteins, 1 Bread, 20 Optional
