Recipe : Beef with Adobo Sauce

Makes 4 servings

Find canned chipotles en adobo, smoked dried jalapeno peppers in a spicy sauce, in
Latino groceries or some supermarkets. The peppers and sauce can be pureed,
frozen in ice cube trays and then stored in bags in the freezer. Add a cube to soups,
sauces or chili for a terrific flavor boost. Use it judiciously; it's very hot!

1 teaspoon vegetable oil
4 medium onions, sliced
2 garlic cloves, minced
15 ounces boneless lean beef loin or round, cut into 2" cubes
2 cups low-sodium beef broth
1 teaspoon pureed canned chipotles en adobo, or to taste
1 large or 2 small plum tomatoes, finely diced
2 medium scallions, sliced
1 medium jalapeno pepper, seeded, deveined and minced, or to taste (wear gloves
to prevent irritation)
2 tablespoons minced fresh cilantro
2 teaspoons cornstarch, dissolved in 1 tablespoon water

In large nonstick skillet, heat 1/2 teaspoon of the oil; add onions. Cook over
medium heat, stirring frequently, 15 minutes, until onions are deep golden
brown. Add garlic; cook, stirring frequently, 2 minutes. Remove onion mixture
from skillet; set aside.
In same skillet, heat remaining 1/2 teaspoon oil; add beef. Cook over medium
heat, stirring frequently, 8-10 minutes, until beef is browned on all sides and
cooked through. Add broth, chipotles, 1/2 cup water and reserved onion
mixture; bring liquid to a boil. Reduce heat to low; simmer, covered, 1 1/2-2
hours, until beef is very tender.
Meanwhile, in small bowl, combine tomato, scallions, jalapeno pepper and
cilantro; set aside.
Stir dissolved cornstarch into beef mixture; simmer, uncovered, stirring
constantly, 3 minutes, until liquid is slightly thickened. Divide evenly among 4
bowls, sprinkle with tomato mixture and serve.

SERVING (1 1/4 CUPS) PROVIDES: 1/4 Fat, 1 1/2 Vegetables, 3 Proteins, 15
