Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Beef with Asparagus and Cherry Tomatoes
This is a quick and very colorful meal; for a change of pace, substitute sugar snap
peas or green beans for the asparagus.
Makes 4 servings
24 asparagus spears, cut diagonally into 1/2" pieces
10 ounces lean boneless beef sirloin, cut into 1/4" strips
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup diagonally sliced scallions (1/2" slices)
1 garlic clove, very thinly sliced
24 cherry tomatoes
In large nonstick skillet, combine asparagus and 1/4 cup water; bring liquid to
a boil. Reduce heat to low; simmer 2 minutes, until asparagus are just tender
and water is evaporated.
Sprinkle beef on all sides with salt and pepper; add beef, scallions and garlic to
cooked asparagus. Cook, stirring frequently, 4 minutes, until beef is cooked
through. Add tomatoes; cook, stirring frequently, 2 minutes, until tomatoes are
heated through.
SERVING (1/4 OF MIXTURE) PROVIDES: 2 1/4 Vegetables, 2 Proteins.
