Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Belgian Beef with Beer
Makes 4 servings
If you like onions, you'll love this rich stew. Serve it with noodles or boiled potatoes
and, of course, beer.
2 teaspoons vegetable oil
4 medium onions, thinly sliced
1 large garlic clove, minced
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
15 ounces boneless lean beef loin or round, cut into 2" cubes
12 fluid ounces dark beer
1/2 cup low-sodium beef broth
1 teaspoon firmly packed dark brown sugar
1 bay leaf
1 teaspoon cider vinegar
1/4 teaspoon dried thyme leaves
In large nonstick skillet, heat 1 teaspoon of the oil; add onions. Cook over
medium heat, stirring frequently, 8-10 minutes, until onions are golden brown.
Stir in garlic; cook, stirring frequently, 2 minutes. With slotted spoon, remove
onion mixture from skillet; set aside.
On sheet of wax paper or paper plate, combine flour, salt and pepper; add beef,
turning to coat evenly. Set remaining flour mixture aside.
In same skillet, heat remaining 1 teaspoon oil; add beef. Cook over medium
heat, stirring frequently, 8-10 minutes, until beef is browned on all sides and
cooked through. Add beer, broth, brown sugar, bay leaf, vinegar and thyme;
bring liquid to a boil, scraping up browned bits from bottom of skillet. Return
onions to mixture. Reduce heat to low; simmer, covered, stirring occasionally, 1
1/2-2 hours, until beef is very tender.
In cup or small bowl, combine remaining flour mixture and 2 tablespoons cold
water, stirring until flour is dissolved. Stir dissolved flour into beef mixture;
simmer, uncovered, stirring frequently, 10 minutes, until mixture is slightly
thickened. Remove and discard bay leaf. Divide evenly among 4 bowls and
serve.
