Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Chili Tacos

Makes 4 servings

1 tablespoon + 1 teaspoon olive oil
1 cup finely chopped green bell pepper
1/2 cup minced onion
4 garlic cloves, minced
1 teaspoon finely chopped deveined seeded jalapeno pepper (wear gloves to prevent
irritation)
8 ounces drained cooked red kidney beans
5 ounces lean ground beef (10% or less fat)
4 ounces cooked lean boneless pork, shredded or finely chopped
2 teaspoons ground cumin
1 teaspoon dried oregano leaves
Pinch salt
Freshly ground black pepper, to taste
1 cup canned whole Italian tomatoes (no salt added), chopped
8 taco shells
2 cups shredded Romaine or iceberg lettuce leaves
1 cup mild, medium or hot salsa
1/4 cup nonfat sour cream
2 tablespoons minced fresh cilantro

In medium nonstick skillet, heat oil; add bell pepper, onion, garlic and jalapeno
pepper. Cook over medium-high heat, stirring frequently, 6-7 minutes, until
vegetables are golden brown. Add beans, beef, pork, cumin, oregano, salt and
black pepper; cook, stirring to break up meat, 3-4 minutes, until beef is no longer
pink. Add tomatoes; reduce heat to low. Simmer, stirring frequently, adding
water, a few tablespoons at a time to keep mixture from sticking, 10 minutes,
until thickened.
Fill each taco shell with an equal amount of beef mixture; top evenly with lettuce,
salsa and sour cream. Serve sprinkled with cilantro.
