Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Greek Lamb Burgers
Makes 4 servings
Topped with a spoonful of yogurt and slices of cool cucumber, these scrumptious
burgers are a little taste of Greece!
15 ounces lean ground lamb
12 large kalamata olives, pitted and chopped
1 1/2 ounces feta cheese, crumbled
2 tablespoons minced fresh mint leaves
2 tablespoons minced fresh flat-leaf parsley
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Two 2-ounce whole-wheat pitas, halved to form 4 pockets
1/2 cup plain nonfat yogurt
1/2 medium cucumber, thinly sliced
Spray rack in broiler pan with nonstick cooking spray; preheat broiler.
In medium bowl, combine lamb, olives, cheese, mint, parsley, garlic, salt and
pepper; form into 4 equal patties.
Place patties onto prepared rack in broiler pan; broil 4" from heat, turning once,
14 minutes, until cooked through.
Place each burger into 1 pita pocket; top each burger with 2 tablespoons of the
yogurt and one fourth of the cucumber slices, and serve.
SERVING (1 FILLED PITA POCKET) PROVIDES: 1/2 Fat, 1/4 Vegetable, 3 1/2
