Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Ham and Cheese Timbales
Makes 4 servings
1 teaspoon vegetable oil
1 cup finely diced onions
2 ounces finely chopped cooked Virginia ham
1 1/2 ounces shredded Gruyere cheese
1 tablespoon grated Parmesan cheese
2 cups egg substitute
1 cup evaporated skimmed milk
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
Pinch ground red pepper
Pinch nutmeg
Adjust oven rack to divide oven in half; preheat oven to 350o F. Spray four 8-
Ounce custard cups or ramekins with nonstick cooking spray.
In small skillet, heat oil; add onions. Cook over medium-high heat, stirring
frequently, 3-4 minutes, until golden brown. Stir in ham; remove from heat.
Divide mixture evenly among prepared ramekins; sprinkle evenly with Gruyere
and Parmesan cheeses.
In medium bowl, combine egg substitute, milk, salt, black pepper, red pepper and
nutmeg; pour evenly into ramekins.
Place large roasting pan on center oven rack; add filled ramekins. Carefully pour
boiling water into roasting pan to a depth of about 1/2"; bake 15-25 minutes, until
a knife inserted in center of a timbale comes out clean.
