Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Hawaiian Pork and Pineapple Brochettes
These brochettes are a snap to prepare, yet make a fun and special entree.
Makes 4 servings
10 ounces lean boneless loin of pork, cut into 1" cubes
1/4 teaspoon salt
Pinch freshly ground black pepper
1 cup drained canned pineapple chunks (no sugar added)
3/4 cup drained canned water chestnuts
Spray rack in broiler pan with nonstick cooking spray. Preheat broiler.
Sprinkle pork on all sides with salt and pepper. Thread, alternating, an equal
amount of pork, pineapple and water chestnuts onto 8 long metal skewers. Place
skewers onto prepared rack; broil 4" from heat, turning once, 8 minutes, until
pork is cooked through and pineapple and water chestnuts are lightly browned.
SERVING (2 SKEWERS) PROVIDES: 1/2 Fruit, 2 Proteins, 1/4 Bread.
