Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Jalapeno-Nut-Crusted Lamb Chops

Jelly is the secret to making the walnuts stick; substitute mint jelly for the spicy
jalapeno, if you prefer.

Makes 4 servings

Four 5-ounce trimmed loin lamb chops, 1 1/2" thick
1 tablespoon + 1 teaspoon jalapeno or mint jelly
1 garlic clove, finely minced
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1/2 ounce walnuts, finely chopped

Prepare grill for a medium fire, using direct method (see Cooking Methods).
Grill chops about 10 minutes (medium), turning once.
Meanwhile, in small bowl, combine jelly, garlic, salt and pepper. Transfer chops to
each of 4 warm plates; with pastry brush, coat all sides of chops with jelly
mixture. Sprinkle walnuts evenly over chops to form a nut crust before serving.

SERVING (1 LAMB CHOP, WITH CRUST) PROVIDES: 1/4 Fat, 3 Proteins, 25
