Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Angel Hair with Smoked Salmon and Caviar
This elegant entree is a perfect brunch dish when celebrating a special occasion or
whenever you want a special treat!
Makes 4 servings
6 ounces angel hair pasta (capellini)
1 tablespoon + 1 teaspoon reduced-calorie tub margarine
1/4 cup sliced scallions
1/4 cup low-sodium chicken broth
2 tablespoons heavy cream
1 fluid ounce (2 tablespoons) vodka
3 ounces smoked salmon, cut into thin strips
1 ounce drained red lumpfish caviar
In large pot of boiling water, cook pasta 3 minutes, until tender. Drain,
discarding liquid; place into serving bowl. Keep warm.
In small nonstick skillet, melt margarine; add scallions. Cook over medium-high
heat, stirring constantly, 1 minute, until just softened. Reduce heat to low; add
broth, cream and vodka. Cook, stirring constantly, just until heated through (do
not boil).
Pour broth mixture over warm pasta; toss to combine. Add smoked salmon and
caviar; toss again.
SERVING (1 CUP) PROVIDES: 1/2 Fat, 1/4 Vegetable, 1 Protein, 2 Breads, 45
