Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Linguine with Fresh Tuna Sauce

Makes 4 servings

6 ounces linguine
2 teaspoons olive oil
10 ounces boneless tuna steaks, cut into 16 equal pieces
1/4 cup chopped onion
1/4 cup chopped carrot
2 garlic cloves, minced
1 1/2 cups canned whole Italian tomatoes (no salt added), chopped
4 fluid ounces (1/2 cup) dry white wine
One 2 x 1/2" strip lemon zest
3 tablespoons minced fresh flat-leaf parsley
1 tablespoon grated lemon zest

In large pot of boiling water, cook linguine 8-10 minutes, until tender. Drain,
discarding liquid; place into serving bowl. Keep warm.
Meanwhile, in large nonstick skillet, heat 1 teaspoon of the oil; add tuna. Cook
over medium-high heat, stirring frequently, 2 minutes, until fish is lightly
browned and flakes easily when tested with fork. Remove fish from skillet; set
aside.
In same skillet, heat remaining 1 teaspoon oil; add onion, carrot and half of the
garlic. Cook over medium-high heat, stirring frequently, 5 minutes, until
vegetables are softened. Add tomatoes, wine and zest strip; bring liquid to a boil.
Reduce heat to low; simmer, stirring occasionally, 5-10 minutes, until slightly
thickened. Remove and discard zest strip; stir in reserved fish.
In small bowl, combine parsley, grated zest and remaining garlic.
Top warm linguine with tuna mixture; toss to combine. Sprinkle with parsley
mixture; toss again.

SERVING (1 CUP LINGUINE, 1/2 CUP SAUCE, 1 TABLESPOON PARSLEY
