Recipe : Macaroni and Chicken Salad

When you want macaroni salad, try this healthful combination of pasta and vegetables
in a mustard-spiced yogurt dressing; you'll never crave the heavy old-fashioned
version again!

Makes 4 servings

3 ounces elbow macaroni
3/4 cup plain nonfat yogurt
2 tablespoons reduced-calorie mayonnaise
1 tablespoon Dijon-style mustard
1 teaspoon celery seeds
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
8 ounces skinless boneless cooked chicken breasts, cut into 1/2" cubes
2 large plum tomatoes, diced
1 cup minced red onions
1/2 cup shredded carrot
1/2 cup chopped celery

In large pot of boiling water, cook macaroni 9-10 minutes, until tender. Drain,
discarding liquid; rinse. Drain again; set aside.
In large bowl, with wire whisk, combine yogurt, mayonnaise, mustard, celery
seeds, salt and pepper, blending to mix well. Add chicken, tomatoes, onions,
carrot, celery and reserved macaroni; toss to combine. Serve immediately or
refrigerate, covered, until chilled.

SERVING (1 1/2 CUPS) PROVIDES: 1/4 Milk, 3/4 Fat, 1 1/2 Vegetables, 2
Proteins, 1 Bread.

PER SERVING: 253 Calories, 5 g Total Fat, 1 g Saturated Fat, 52 mg Cholesterol, 367
mg Sodium, 28 g Total Carbohydrate, 2 g Dietary Fiber, 24 g Protein, 130 mg Calcium .
