Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Orzo-Spinach Pilaf

Makes 4 servings

3 ounces orzo (rice-shaped pasta)
2 teaspoons olive oil
1/2 cup chopped onion
1/2 cup chopped celery
1 garlic clove, minced
1 cup well-drained thawed frozen chopped spinach
1/4 cup low-sodium chicken broth
1 1/2 teaspoons red wine vinegar
1 1/2 ounces queso blanco* or Monterey Jack cheese, shredded
Freshly ground black pepper to taste

In large pot of boiling water, cook orzo 9-11 minutes, until tender; drain.
Meanwhile, in large nonstick skillet, heat oil; add onion, celery and garlic. Cook
over medium heat, stirring frequently, 4-5 minutes, until vegetables are tender.
Stir in spinach, 2 tablespoons of the broth and the vinegar; cook, stirring
frequently, 2-3 minutes longer, until liquid is evaporated.
Add orzo, cheese, pepper and remaining 2 tablespoons broth to vegetable
mixture; stir just until combined.

EACH SERVING (1/2 CUP) PROVIDES: 1/2 Fat, 1 Vegetable, 1/2 Protein, 1 Bread

PER SERVING: 159 Calories, 6 g Total Fat, 2 g Saturated Fat, 9 mg Cholesterol, 163
mg Sodium, 21 g Total Carbohydrate, 2 g Dietary Fiber, 7 g Protein, 150 mg Calcium
