Recipe : Orzo with Zucchini
Makes 4 servings
Although orzo means "barley" in Italian, this is actually a rice-shaped pasta--you'll
find it in the pasta aisle of your supermarket.
2 teaspoons olive oil
1/2 onion, chopped
1 medium zucchini, grated
1/2 cup orzo
1 garlic clove, minced
1/4 teaspoon salt
2 tablespoons grated Parmesan cheese
In a medium saucepan, heat the oil. Add the onion; cook, stirring as needed, until
softened, about 5 minutes. Add the zucchini; cook, stirring as needed, until
softened, 4-5 minutes. Stir in the orzo and garlic; cook, stirring, until the orzo
is just golden, 2-3 minutes. Add 1 1/2 cups water and the salt; bring to a boil.
Reduce the heat and simmer, uncovered, until the orzo is tender, about 11
minutes. Serve, sprinkled with the cheese.
