Makes 4 servings
1 teaspoon olive oil
1 cup diced red bell pepper
1 cup diced green bell pepper
4 1/2 ounces medium egg noodles, cooked and drained
1/4 cup tomato juice
1/4 cup minced fresh flat-leaf parsley
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
In medium skillet, heat oil; add red and green peppers. Cook over medium-high
heat, stirring frequently, 5 minutes, until lightly browned.
Add noodles, tomato juice, parsley, salt and black pepper to bell pepper mixture;
toss to combine.
