Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Penne Pasta with Salsa Cruda

Makes 4 servings

6 ounces penne or other medium-size pasta
6 large plum tomatoes, blanched, peeled, seeded and finely chopped
1 small garlic clove, minced
Pinch salt
Freshly ground black pepper to taste
1/2 cup torn fresh basil leaves

In large pot of boiling water, cook penne 9-11 minutes, until tender.
Meanwhile, in large bowl, combine tomatoes, garlic, salt and pepper.
Drain penne; place in large decorative bowl. Add tomato mixture; toss to coat
thoroughly. Let mixture stand at room temperature until ready to serve.
Just before serving, sprinkle pasta mixture with basil.

EACH SERVING (2 CUPS) PROVIDES: 1 1/2 Vegetables, 2 Breads
