Recipe : Penne with Zucchini and Goat Cheese
Makes 4 servings
Goat cheese melts into a rich, creamy sauce. And mint adds a refreshing flavor,
although chervil, tarragon or thyme also would be tasty.
1 1/2 cups penne
1 tablespoon olive oil
2 medium zucchini, thinly sliced
1/2 teaspoon salt
3 ounces goat cheese
2 teaspoons chopped mint
1/4 teaspoon freshly ground black pepper
Cook the penne according to package directions. Drain, reserving 1/2 cup of the
pasta cooking liquid, and keep warm.
In a large nonstick skillet, heat the oil. Add the zucchini and salt; cook, stirring
as needed, until very soft, about 10 minutes. Stir in the penne and cooking
liquid; cook, stirring as needed, until the liquid is slightly reduced. Then reduce
the heat and stir in the goat cheese; simmer, stirring and breaking up with the
spoon, until just melted, 1-2 minutes. Sprinkle with the mint and pepper; serve at
once.
SERVING PROVIDES: 2 Breads, 1 Fruit/Vegetable, 1 Protein/Milk, 1 Fat.
