Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Pink Noodles

Makes 4 servings

4 1/2 ounces thin noodles
8 sun-dried tomato halves (not packed in oil), slivered
1/2 cup tomato juice
1 teaspoon stick margarine
Pinch freshly ground black pepper
Pinch cinnamon

In medium saucepan of boiling water, cook noodles and tomatoes 2-3 minutes,
until barely tender; drain and set aside.
Meanwhile, in separate medium saucepan, combine tomato juice, margarine,
pepper and cinnamon; cook over low heat, stirring frequently, until margarine is
melted and mixture is heated. Remove from heat.
Add cooked noodles and tomatoes to tomato juice mixture; stir to combine.

EACH SERVING PROVIDES: 1/4 Fat, 1 1/4 Vegetables, 1 1/2 Breads
