Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Spaghetti alla Puttanesca

Named for Italian "ladies of the night" who concocted it as a midnight snack, this
tasty dish traditionally uses canned tuna. Prepared with fresh tuna, it's a truly superb
entre.

Makes 4 servings

6 ounces spaghetti
1 tablespoon olive oil
10 ounces tuna steak, cut into 1" chunks
4 large or 8 small plum tomatoes, peeled, seeded and chopped*
6 pitted large ripe olives, chopped
1 tablespoon rinsed drained capers
2 garlic cloves, minced
2 rinsed drained anchovy fillets, minced (or 1 teaspoon anchovy paste)
1/4 teaspoon crushed red pepper flakes
1/4 cup minced fresh flat-leaf parsley

In a large pot of boiling water, cook the spaghetti according to package
directions. Drain and place in a serving bowl; keep warm.
Meanwhile, place a large nonstick skillet over medium heat 30 seconds; heat the
oil 30 seconds more. Add the tuna and cook, stirring frequently, about 5 minutes,
until golden brown. Add the tomatoes, olives, capers, garlic, anchovies and pepper
flakes; cook, stirring frequently, 10 minutes, until the mixture is thickened.
Transfer to the bowl with the spaghetti and sprinkle with the parsley; toss to
combine. Divide evenly among 4 plates and serve.

*If fresh plum tomatoes are not available, substitute an equal number of chopped
