Spaghettini with Garlic and Oil
Popular as an evening snack with Roman revelers, this humble, easy and savory dish

crunchy vegetables makes it a satisfying meal.
Makes 4 servings
6 ounces spaghettini
1/3 cup + 2 teaspoons low-sodium chicken broth
1 tablespoon + 1 teaspoon olive oil
2 garlic cloves, minced
1/8 teaspoon crushed red pepper flakes
2 tablespoons minced fresh flat-leaf parsley
In a large pot of boiling water, cook the spaghettini according to package
directions. Drain and place in a serving bowl; keep warm.
In a medium nonstick skillet over medium heat, combine the broth, oil, garlic and
pepper flakes. Cook, stirring constantly, 1-2 minutes, until the mixture is heated
through and the garlic starts to sizzle and becomes fragrant. Pour over the
spaghettini and sprinkle with the parsley; toss to coat. Divide evenly among 4
plates and serve.
