Delicious And Healthy Low Carb Atkins Diet Recipe

Recipe : Spaghettini with Mussels-Garlic and White Wine
Easy, quick, inexpensive, attractive, flavorful and filling--few dishes can boast so
many attributes!
Makes 4 servings
6 ounces spaghettini
4 fluid ounces ( 1/2 cup) dry white wine
2 teaspoons olive oil
1/2 cup minced fresh flat-leaf parsley
1 tablespoon minced fresh thyme leaves (or 1 teaspoon dried leaves, crumbled)
4 garlic cloves, minced
1/4 teaspoon crushed red pepper flakes
24 medium-sized mussels, scrubbed and debearded
In a large pot of boiling water, cook the spaghettini according to package
directions. Drain and place in a serving bowl; keep warm.
In a large saucepan over medium heat, combine the wine, oil, parsley, thyme,
garlic and pepper flakes. Cook, stirring constantly, 1-2 minutes, until the garlic
becomes fragrant. Add the mussels; cover and cook 4-5 minutes, until the mussels
open. Discard any unopened mussels.
Add the mussel mixture to the spaghettini and toss to combine. Divide evenly
among 4 plates and serve.
